Zero Rosé de Saignée – Riserva

Zero Riserva Pas Dosé Rosé de Saignée represents the style of Enrico Serafino Alta Langa. As well as for Alta Langa Zero, the decision to avoid any liqueur d’expédition as well as late disgorgement, allows Zero Rosé to affirm its greatly appreciated unique personality. Pinot Nero vine qualities are brought out thanks to the “saignée” technique that gives to the wine a complex structure.


PRODUCTION TECHNIQUE: The altitude of the vineyards has an average of 500 meters in the authorized areas of the Alta Langa docg. The grapes are selected on the sorting table and chilled. Following the short maceration aimed to the color extraction (saignée), the soft pressing happens in an inert nitrogen environment. Fermentation is exclusively in temperature-controlled steel tanks. The wines obtained from this process remain in contact with their own yeasts and are subjected to periodic bâtonnage until the tirage and second fermentation. This process takes place in the historic underground cellars in the absence of light and at controlled temperatures for the time required by the vintage, at least 60 months. The dégorgement à la glace ends by filling the bottle with our Zero Reserve wine.

TASTING NOTES: Pale rosé with onion skin hues combined with the complex and deep aroma of red fruits such as raspberry, strawberry, blueberry and blackcurrant fading into bread crust, white fruits and linden blossom leads to a fine and persistent “perlage” and to a great freshness and long-mineral finish taste.
