Zero 140 de Saignée – Riserva

Zero 140 is one of Enrico Serafino’s extreme-aged Alta Langa. The original proposal first made in 2018 with the 2005 vintage, was joined in 2023 by the Cuvée Zero 140 de Saignée made of Pinot Noir vinified in purity. With almost 12 years of aging on the lees, Zero 140 de Saignée Pas Dosé is a classic method that comes from afar and looks to the future of the entire Appellation of which expresses the full potential.

COMPOSITION OF THE CUVÉE: 100% Pinot Nero

PRODUCTION TECHNIQUE: The altitude of the vineyards has an average of 500 meters in the authorized areas of the Alta Langa docg. The grapes are selected on the sorting table and the whole clusters are chilled before undergoing soft pressing in an inert environment. Then, in an inert environment, the skins maceration takes place for the period required by the vintage. Following the short maceration, the “Saignée” technique takes place. It consists in the extraction of the must, which is now pink in color, to be fermented in temperature-controlled steel tanks. The wines obtained from this process remain in contact with their own yeasts and are subjected to periodic bâtonnage until the tirage and second fermentation. This process takes place in the historic underground cellars in the absence of light and at controlled temperatures for the time required by the vintage, at least 140 months. The dégorgement à la glace ends by filling the bottle with the reserve wine of the same type.

TASTING NOTES: Pale rosé with onion skin hues and fine and persistent “perlage”. The nose is complex and wide. Bread crust and candied fruit alternate with lime honey and small red fruits, still perceptible after the long aging sur lies. The great freshness and acid tension are grafted onto mineral and roasted hazelnut notes. It impresses with its long persistence.
