Made exclusively with Pinot Noir, it retains a striking pink colour but is a spumante of outstanding temperament. Its spiciness, which is accentuated over time, should make it a great gastronomic brut. Cocchi was the first producer to conceive and create an Alta Langa rosé.

COMPOSITION OF THE CUVÉE: 100% Pinot Noir

PRODUCTION METHOD: This Alta Langa is a “rosé de saignée” the colour of which comes from lightly macerated and pressed Pinot Noir. The first fermentation takes place in steel tanks, where the wine rests until spring, before being bottled for the second fermentation. The prise de mousse is completed with long ageing in a cool, dark place for 36 months, during which the character of this Alta Langa takes shape.
Remuage is carried out by hand on pupitres; dégorgement à la glace is usually performed twice a year, in spring and autumn.

TASTING NOTES: With its characteristic delicate colour, Rösa is a low dosage brut spumante, decisively dry, crisp and savoury, rigorous yet charming, Its spiciness is accentuated over time. Volume and a nicely balanced mouth-feel make this a pleasant and very fruity wine.
