Pas Dosé Blanc de Noirs

Cocchi Pas Dosé is an Alta Langa reserve of 5000 bottles and 500 Magnums.
Cocchi’s natural brut, made with 100% Pinot noir. It is made in important vintages, with grapes characterised by well-balanced concentration and acidity and which, from the very beginning of the harvest, allow us to predict a long-ageing cuvée. The first bottles of this cuvée of Pinot Noir, which gives its finest expression with zero dosage, undergo dégorgement after 60 months.


PRODUCTION METHOD: With a yield of 55%, the must ferments in small steel tanks for three weeks. The prise de mousse and ageing sur lattes lasts 60 months. Remuage is carried out by hand on pupitres; dégorgement à la glace is usually performed twice a year, in spring and autumn. Zero sugar added at the time of disgorgement and zero liqueur.

TASTING NOTES: Long ageing brings out the tightness and complexity of the finest Pinot Noirs, developing delicate colours and a fine perlage, with clear but persistent aromas. On the palate we find a nice savouriness and the typical dryness of a Pas Dosé. It has a crisp, well-defined and persistent flavour reminiscent of Langa hazelnuts and candied white fruit, while maintaining a good balance with light acid notes.
