Parcellaire Extra Brut

Enrico Serafino applies the parcellaire vinification since the creation of the docg Alta Langa. The parcels are then blended into the different Cuvées. Parcellaire is obtained by selecting some parcels that best represent the typical scratchy character of the appellation. The dosage intentionally reduced in sugar, with the absence of spirits in the liqueur, eliminates any interference between the wine and its original territory.

COMPOSITION OF THE CUVÉE: 95% Pinot Nero, 5% Chardonnay

PRODUCTION TECHNIQUE: The altitude of the vineyards has an average of 400 meters in the authorized areas of the Alta Langa docg. The grapes are selected on the sorting table and the whole clusters are chilled before undergoing soft pressing in an inert environment. Fermentation is exclusively in temperature-controlled steel tanks. The bases obtained from this process remain in contact with their own yeasts and are subjected to periodic bâtonnage until the tirage and second fermentation. This process takes place in the historic underground cellars in the absence of light and at controlled temperatures for a period of more than 40 months. The dégorgement à la glace ends by filling the bottle with the Liqueur d’Expedition which for this Extra-Brut is 4 gr/l residual sugar. To preserve the terroir-wine connection, no spirits such as Cognac or Brandy are ever used in the Liqueur d’Expedition.

TASTING NOTES: The colour is light straw yellow with golden hues with fine and persistent “perlage”; the nose is complex, attractive, pleasantly crisp, with floral hints, white fruit, and bread crust. The palate is vibrating and vertical with citrus scents, elegant and full-bodied and a long mineral aftertaste.
