The name comes from the fact that below a vineyard in Trezzo, there is the spring of the Tinella stream.
COMPOSITION OF THE CUVÉE:
100% Pinot Noir. The soil of our vineyards is marly limestone, with some sand veins.
DOSAGE:
Brut. The dosage changes according to the vintage. For each new vintage, the most appropriate dosage is decided according to the evolution of the wine.
PRODUCTION TECHNIQUE:
Manual selection is made before a soft pressing. First fermentation occurs in steel vats at a temperature of 14°C. The second fermentation occurs in the bottle for 1 month at a temperature of 14°C.
In the bottle on yeasts for 30/40 months with a periodical remuage of the bottles.
OENOLOGIST’S REMARKS:
Colour: light staw-yellow, with a fine and persistent perlage.
Fragrance: great nose with hints of rennet apple, rose hip, honey, bread crust.
Flavour: a great consistency between nose and mouth and a remarkable acidity give to this wine a long and impressive persistence in the palate.
