Our Classic Method Spumante was born in 1981 from Antonio Deltetto’s passion for sparkling wines, experimenting with indigenous varieties: Arneis and Nebbiolo. In 1997, for the first time, Pinot Nero and Chardonnay were planted and in 2000 the first “Metodo Classico” made with international varieties has been released. From this passion for bubbles, in 2016 the first alta Langa Docg was born. Our vineyards placed at altitudes between 450 and 600 m over the sea level in the municipality of Roddino, give wines of great acidity, finesse and aromatic complexity with great potential in the long aging.
COMPOSITION OF THE CUVÉE: 55% Pinot Noir – 45% Chardonnay
PRODUCTION TECHNIQUE: The harvest is entirely made by hand in the second half of august. Fermentation at 18° C in stainless steel and second fermentation at 12° C. Ageing in bottle for at least 30 months on its own yeasts. The dégorgement à la glace, as for all the production, is made in our family cellars in canale (CN).
TASTING NOTES: Straw yellow pale colour, fine and lasting finish with an intense bouquet of bread crust and yeast, dry, sapid and well-balanced.
