Cuvée Tresessanta

The last-born Alta Langa Riserva Pas Dosé of the Alice Bel Colle Winery is called Cuvée Tresessanta.
It is born from the selection of the best Chardonnay grapes and is completed with aging on the yeasts for around 36 months. It is an intense golden colour wine, the perlage is fine and persistent and the aroma is characterized by notes of bread crust and dried fruit which recall the complexity of balance of a rich floral bouquet as for all Alice Bel Colle wines.
The name Cuvée Tresessanta comes from the view of the vineyards that can be enjoyed from the panoramic viewpoint of Alice Bel Colle and, to fully enhance the identity of the territory, the “famous” houses that embrace the main square of the Town have been designed on the label, in a play of nocturnal colours that enhances their magic.

DOSAGE: Pas dosé

COMPOSITION OF THE CUVÉE: 100% Chardonnay, small vineyard with east exposition with soil rich in chalk.

PRODUCTION TECHNIQUE: The grapes are usually harvested at the beginning of August and only in the mornings in order to bring the grapes into the Cellar when they are still fresh. The Chardonnay grape are harvested by hand in small 15kg boxes and transferred to the Cellar where direct pressing is carried out. The resulting must is clarified and fermented at a controlled temperature. At the end of fermentation, the wine stays on the fine lees for about 7 months. During the following spring, the second fermentation occurs by placing the bottles in a temperature-controlled environment. At the end of the second fermentation, the wine is aged on the lees for at least 36 months, followed by disgorgement and final packaging.

TASTING NOTES: The wine has a straw yellow colour with a fine and persistent perlage. The aroma is characterized by hints of bread crust, dried fruit, and candied fruit. The mouthfeel is creamy and has a good acidity that gives freshness.
