Cuvée Leonora Rosé

This wine was born as a tribute from the owner and producer Giuseppe Ravasini to his wife Leonora.
It was also born with the intention to rediscover the past tradition of the Spumante wine in Piedmont when in the 19th century in Tagliolo Monferrato and other regions in Piedmont, Spumante wine was produced with the Pinot Nero grape together with other important wines.

COMPOSITION OF THE CUVÉE: 100% Pinot Nero

PRODUCTION TECHNIQUE: The grapes with what Alta Langa is produced come expressly from the vineyards that surround the family house which is positioned on soil composed of sedimentary limestone matrix at 400 meters above sea level.
The grapes are carefully selected by hand in small chests and quickly transferred to the cellar to be pressed and then controlled at a low temperature in steel vats. The product is completed adding a small amount of the cuvée harvested the year before and accurately refined in wooden vats.
Fermentation in bottles as the Classic Method and stays on the yeast for 30 months.

TASTING NOTES: The color can be defined as soft skins of an onion with delicate pink reflections. Perlage is fine and persistent.
Aroma is elegant and intense with hints of crusted bread, apples and an evident note of rose bouquets.
To the palate it is well balanced persistent and full bodied with a note of acidity that characterizes a pleasant freshness.
