Cuvée Enrico Cerutti

This wine for the Cerutti family expresses the vocation and tradition of the Canelli area, linked for over a century to the history of the Piedmontese classic method sparkling wine.
The name of the Cuvée wants to remember the founder Enrico Cerutti who in 1931 bought the farm with the first vineyards.

COMPOSITION OF THE CUVÉE: 80 % Pinot Nero, 20% Chardonnay

Harvest, Vinification System and Aging: Selection of the grapes, hand-picked and placed in small baskets, followed by soft pressing and fermentation in stainless steel tanks under controlled temperature. Once the alcoholic fermentation is over, the wine stays on fine lees
for several months of refining.
Selected yeast for the tirage are added at the beginning of the spring season following the harvest, starting the second fermentation inside the bottle. After at least 30 months of such bottle refining, bottles are then ready for disgorging.

TASTING NOTES: Colour: faint straw yellow with green hues. On the nose: intense, fragrant, vegetal aromas of herbs then fruity hints of apple, white flowers in a final frame of characteristic scents of bread and yeast. Palate: dry, smooth, pleasantly fresh, persistent.
