Cuvée Aurora Blanc de Noirs

Banfi was one of the first seven companies to found the Alta Langa project: Cuvée Aurora Alta Langa Banfi projectstarted in the early ‘90s, with the goal ofcreating our best interpretation of Metodo Classico “d’Excellence and par Excellence”in Piedmont. Cuvée Aurora Alta Langa Blanc de Noirs pas dosé, a niche production in n umbered bottles, is the result of our sparkling Pinot Noir winemaking experience: it completes our Alta Langa line up to now consisting of the historic Cuvée Aurora Extra Brut, Cuvée Aurora Extra Brut Rosé and from the Cuvée Aurora 100 Mesi Riserva pas dosé.

COMPOSITION OF THE CUVÉE: 100% Pinot Nero

PRODUCTION METHOD: The gentle pressing of the grapes and the static decantation of the must for one night are followed by the fermentation for about three weeks at a temperature of 16/17 °C. The wine thus obtained remains in contact with the yeasts and a periodic bâtonnage until the following spring follows, when the tirage is made. Fermentation in the bottle: at a controlled temperature (13/14 °C) for 30/40 days .Aging: in bottle sur lie for at least 60 months. Remuage: traditional on pupitres and Degorgement à la glace. Dosage: pas dosé

TASTING NOTES:
The color is bright yellow with slight golden reflections.The first floral scent evolves into more complex notes reminiscent of toasted hazelnut, candied citrus fruits andaromatic herbs.Excellent structure, vertical and fresh. Well balanced in its acid and savory notes.The high creaminess of the foam contributes to the overall pleasantness.
