Cocchi has chosen the Piedmontese expression “Bianc ‘d Bianc” for this white wine made exclusively from white grapes: a special cuvée which reflects the strength of the terroir expressed by 100% Chardonnay.
COMPOSITION OF THE CUVÉE: 100% Chardonnay
PRODUCTION METHOD: A reduced yield of 5,500 kg of grapes produces 3,000 litres of free-run juice, which ferments in small steel tanks for three weeks. After the prise de mousse and ageing sur lattes, remuage is carried out by hand on pupitres; dégorgement à la glace is usually performed twice a year, in spring and autumn. The limited quantity of sugar makes this a contemporary, rigorous and seductive spumante.
TASTING NOTES: Complex aromas of white fruit and a light apricot note, a palate characterised by volume and a lingering mouth-feel with a delicate and enveloping effervescence which allow notes of white chocolate and sweet fruit to emerge.
