A historic sparkling wine from the Contratto winery, Bacco d’Oro is the only Contratto sparkling wine which sees dosage. On the nose, the wine exhibits intense peach blossoms, honey, and dried fruit. Creamy and enveloping, the palate is full of ripe fruit, citrus, and marzipan notes.
COMPOSITION OF THE CUVÉE: 80% Pinot Noir, 20% Chardonnay
Vineyards in Bossolasco.
The upper part of the vineyard is sandy, calcareous, and rich in silt and silicon while the lower part is marly and calcareous.
DOSAGE: Brut
PRODUCTION TECHNIQUE: After destemming, the grapes are crushed without pressure. From the pressed grape we obtain free run must, which is the most precious part of the juice. The first fermentation takes place in temperature-controlled stainless steel tanks; followed by almost 8 months of aging always in stainless steel and finally bottled. The second fermentation takes place in bottle and is followed by almost 42 months aging on its lees. Riddling is done by hand.
TASTING NOTES:
Color: golden yellow.
Perfume: delicate hints of acacia honey and bergamot.
Taste: fresh and eneveloping on the palate, with elegant aromas of thyme and small pastry. The fine and creamy perlage accompanies the delicate but persistent finish.
FIRST VINTAGE PRODUCED: First Bacco d’Oro produced: 2007 / First Bacco d’Oro Alta Langa: 2017
