Zero is the Alta Langa that best represents the philosophy of Enrico Serafino. Enrico Serafino believed in the rule that no spirits (such as Cognac and Brandy) had to be used in the Alta Langa produced in the winery. For Zero, the rule is more strict and firm: the Pas Dosé was chosen avoiding spirits and sugar. This wine manages to last over time maintaining and enhancing the complexity of the Alta Langa vineyards.
COMPOSITION OF THE CUVÉE: Pinot Noir;
PRODUCTION TECHNIQUE: The altitude of the vineyards has an average of 500 meters in the authorized areas of the Alta Langa docg. The grapes are selected on the sorting table and the whole clusters are chilled before undergoing soft pressing in an inert environment. Fermentation is exclusively in temperature-controlled steel tanks. The wines obtained from this process remain in contact with their own yeasts and are subjected to periodic bâtonnage until the tirage and second fermentation. This process takes place in the historic underground cellars in the absence of light and at controlled temperatures for the time required by the vintage with an average of 70 months. The dégorgement à la glace ends by filling the bottle with our Zero Reserve wine.
TASTING NOTES: Pale yellow. Persistent and complex aroma of linden flowers, honey, ripe white fruits, citrus fruits, pastries, bread crust, and yeast. Very fine persistent perlage. Creamy taste, austere, vibrant fresh minerality.
