Zero

Zero was the first Alta Langa Pas Dosé ever and it’s also the one that best represents Enrico Serafino’s spirit. If in all Serafino’s Alta Langa wines, spirits such as Cognac and Brandy are not used, for Zero was chosen the non -dosage way. In intent and, probably, in fact this wine succeeds in lasting over time while maintaining and enhancing the complexity of the Alta langa vineyard.

DOSAGE: Pas dosé

COMPOSITION OF THE CUVÉE: 100% Pinot Nero

PRODUCTION TECHNIQUE: The altitude of the vineyards has an average of 500 meters in the authorized areas of the Alta Langa docg. The grapes are selected on the sorting table and the whole clusters are chilled before undergoing soft pressing in an inert environment. Fermentation is exclusively in temperature-controlled steel tanks. The wines obtained from this process remain in contact with their own yeasts and are subjected to periodic bâtonnage until the tirage and second fermentation. This process takes place in the historic underground cellars in the absence of light and at controlled temperatures for the time required by the vintage with an average of 60 months. The dégorgement à la glace ends by filling the bottle with our Zero wine.

TASTING NOTES: Pale yellow. Persistent and complex aroma of linden flowers, honey, ripe white fruits, citrus fruits, pastries, bread crust, and yeast. Very fine persistent perlage. Creamy taste, austere, vibrant fresh minerality.
