Our Alta Langa D.O.C.G. comes from the passion and enthusiasm that the Sartirano family has always had towards the champenoise method. The adventure begins with our oenologist Marco Marsili. Since 2009, the harvest time always starts with the pinot noir and the chardonnay from the Alta Langa hills. The process is slow and long, skill, perseverance and patience are needed. But the final result always satisfies us and compensates for all the work we do in the vineyard and in the cellar.
COMPOSITION OF THE CUVÉE: 30% Chardonnay, 70% Pinot Noir
PRODUCTION TECHNIQUE: Delicate pressing of the grapes, fermentation at low temperature, MLF induction, refining in stainless steel tank for 6 months, batonnage sur lie for chardonnay, maturation in bottle for at least 30 months.
TASTING NOTES: Intense straw yellow colour, fine and persistent perlage. Typical nose of the champenoise method, with marked hints of hazelnut, candied fruit, bread crust. In the mouth, it is sapid, creamy, persistent, with a slightly zesty finish.
