Complex, elegant with notes of small red fruits that fade into bread crust, flowers and white fruits as well as fresh hay.

GRAPE VARIETY
100% Pinot Noir, Guyot training with sustainable viticulture.

GRAPE HARVEST
It takes place after meticulous leaf removal and thinning operations. The small, high-quality bunches require special care in the final stages of the ripening process in order to obtain a soft colour and a good acidity.

WINEMAKING
The whole grapes, – harvested manually in crates – rest for a short maceration time of 4 hours, to favour the extraction of the typical Rosé colour. Soft pressing and alcoholic fermentation at 14°C with a 2-month soak on fine lees.

TIRAGE
A very slow re-fermentation in the bottle, characteristic of the Metodo Classico, takes place in the spring followed by a bottle ageing of at least 48 months.

DEGORGEMENT AND ZERO-DOSAGE
The elegance and completeness that Pinot Noir is able to express after long stays on the lees reaches its peak when it is pure.
We exclusively produce our Alta Langa from Pinot Noir grapes as a zero-dosage Riserva.

FOOD PAIRING
Excellent as an aperitif; perfect with ham and salmon dishes, pairings with shellfish and all seafood cuisine. It is also very enjoyable with structured starters, tasty first courses and soups, white meat and cheese. Also pleasant with pastries. To be drunk at 4 – 6 °C within 10-15 years.

TASTING NOTES
Colour: Brilliant rosé with onion skin nuances. Fine and very long perlage.
Nose: Elegant, wide and crisp with inviting hints of strawberry and blueberry, lime blossom and currant that combine with notes of citrus and bread crust, blended with hints of fresh hay and undergrowth.
Taste: fruity and white flowers blend with its fresh and pleasant structure. Long, overwhelming finish with tasty mineral notes.
