The first classical method single-varietal of our range. The vineyard, from which comes the Pinot Noir that composes this wine, was the one that gave Roberto the idea of producing sparkling wine, due to its position, altitude and microclimate. A difficult choice to make at the time, in 2010, but perhaps this was instinctively correct. 2016 was our first vintage of Rosé. Very satisfied, we kept a small batch, which rested for 72 months on yeasts and then we decided it was time to taste it.
COMPOSITION OF THE CUVÉE : Pinot Noir 100%
DOSAGE: Extra Brut. The dosage changes according to the vintage. For each new vintage, the most appropriate dosage is decided according to the evolution of the wine.
PRODUCTION TECHNIQUE:
Manual selection is made before a soft pressing. First fermentation occurs in steel vats at a temperature of 14°C. The second fermentation occurs in the bottle for 1 month at a temperature of 14°C.
Ageing in the bottle on yeasts for 72 months.
OENOLOGIST’S REMARKS:
A citrusy fragrance with hints of red apple and pink grapefruit, bread crust.
Mineral flavour, well-balanced with a remarkable structure this wine shows a long persistence in the palate.
