Our most classic wine, the one we started with in 2013. A blend that seeks the best balance between Pinot Noir and Chardonnay every year coming from vineyards located at an altitude of 480 metres a.s.l.
COMPOSITION OF THE CUVÉE: 60% Pinot Noir, 40% Chardonnay. The soil of our vineyards is marly limestone, with some sand veins.
DOSAGE: Extra Brut. The dosage changes according to the vintage. For each new vintage, the most appropriate dosage is decided according to the evolution of the wine.
PRODUCTION TECHNIQUE: A manual selection is made before a soft pressing. First fermentation occurs in steel vats at a temperature of 14°C. The second fermentation occurs in the bottle for 1 month at a temperature of 14°C.
Ageing: in the bottle on yeasts for 30/40 months with a periodical remuage of the bottles.
OENOLOGIST’S REMARKS
Colour: Light staw-yellow, pinkish hints with a fine and persistent perlage.
Fragrance: Great nose with hints of rennet apple, jasmine, honey, and bread crust.
Flavour: Dry, well-balanced acidity and remarkable structure give this wine a long and impressive persistence on the palate.
