Our Alta Langa is born from the selection of the best grapes we produce in the Alta Langa vineyard, located in Castelboglione, 400 meters high. The passion for bubbles and the fascination of working with the classic method led Raimondo and his son Daniele (hence the name Tenute RaDe) to devote themselves to the production of this wine.
COMPOSITION OF THE CUVÉE: Chardonnay 70%, Pinot Nero 30%
PRODUCTION TECHNIQUE: The collection period is carefully studied, to proceed at the best time of health and maturation, especially with regard to acidity, an essential factor for longevity and freshness. Harvesting is done strictly by hand, placing the grapes into boxes that are manually unloaded in the press to extract only the flower must, very gently pressing the grapes of the individual Pinot and Chardonnay batches. Follows the static clarification of musts and the inoculum to start the fermentations, always keeping the batches separate. Once this phase is completed, the coarsest lees are removed by decanting and the wines begin their refining and batonage process.
With the new April moon, the wines are cleaned and assembled to prepare them for bottling and foam formation. Here begins the long process of aging in the bottle that lasts 50 months, up to this day, during which the wine is left to rest on its own foam formation yeasts, in bottles stored in stacks. Manual remuage and disgorgement are the last stages of preparation of our Alta Langa classic method, for which we always decide not to add sugar or wines other than our own Alta Langa, to preserve the expression of freshness and purity.
TASTING NOTES: A rich and complex wine, the perlage is very fine and persistent, the golden color is almost luminous. The aromas are clean, decisive, the notes of the long aging on the yeasts are intense. In the mouth the acidity and freshness really take over, but also the length and persistence on the palate. Leaves the mouth clean and slightly sapid, rich in aromas as anticipated by smell.
