Selection of grapes of a single harvest, only the free-run juice the cuvée will be created.
COMPOSITION OF THE CUVÉE: Pinot noir and Chardonnay
PRODUCTION TECHNIQUE: Soft pressing and fermantation of both grape varieties in old wood, where they ages for around 7 months, with weekly bâtonnage. Unfiltered and unclarified.
Degorgement after 36 mouths approximately and dosage around 3 g/L.
TASTING NOTES: Delicate and persistent perlage, bright straw-yellow colour with subtle amber hints. On the nose, reveals notes of freshly beked bread. The palate has considerable structure and an execptional mouthfilling quality.
