The exact representation of our sparkling wine territory. The Alta Langa, 70% Pinot Nero, 30% Chardonny. These are the shares of plants over 500 meters. This is how our Extra Brut is born, slightly dosed in order to understand the finesse and elegance of the bubble.
COMPOSITION OF THE CUVÉE: 70% Pinot Nero, 30% Chardonnay
PRODUCTION METHOD: The grapes are picked into boxes holding around 20 kilos each, and delivered to the winery. Here they immediately undergo gentle, delicate pressing, followed by static in heat-conditioned tanks. The clear must is t hen divided into two parts, the first of which ferments in stainless steel tanks at a low temperature (18-20° C), while the other goes into barriques to ferment in underground cellars at a maximum temperature of 20° C. When the wine in wood has finished its fermentation, it is left on the lees until spring. Then the two lots are blended. A second fermentation takes place in the bottle in May, following which the wine matures on its yeasts in the cool, dark surroundings of the cellar, in keeping with the strictest rules governing the production of Classic Method Sparkling Wine.
TASTING NOTES: This is one of the sparkling wine which have made the history of Fontanafredda, produced on the estate since the 1940s. Made from grapes grown at an altitude that alloes them to ripen slowly, producing very particular aromas, it matures on the lees for at least three years prior to dègorgement. In the glass, its straw-yellowcolour is tinged with green, and it has a very persistent perlage. Very intense ad complex on the nose, its bouquet conjures up mainly wildflower honey and spices, with hints of toasted nuts and breadcrumbs. The structure of Pinot Noir shows throught on the palate, merging beautifully with the fragrance of the chardonnay. Long, lingering finish, with fresh, savoury sensations.
