This is a historic Alta Langa which is produced following a few but fundamental rules which make it unique. A 100% Pinot Noir wine created by always using the same parcel, with a packaging of few bottles which are degassed in 4 stages: they start at 72 months, then 84, 96 and finally 108. This procedure allows the wine to express its qualities to the maximum from year to year, and the same vintage that ages longer on the lees gives and will give different emotions. It is an Alta Langa that can be tasted horizontally or vertically.
COMPOSITION OF THE CUVÉE: Pinot Nero 100%
PRODUCTION METHOD: Grapes harvested in boxes of about 20 kg are directly poured into the press for a soft and delicate pressing. The must obtained is put into thermo-conditioned tanks for static decantation. At this point the limpid must is divided into two parts: one part is fermented in stainless steel tanks at low temperature (16-17 °C), while the other part is introduced in underground cellars inside barriques where it ferments. At the end of fermentation, the wine is kept in contact with fine lees until spring, when the curvée is finally made by blending the wines coming from the two fermentations. In May the wine undergoes a second fermentation, in bottle, followed by a maturation process on yeasts in the cool, dark and protected environment of cellars, according to the strictest rules of the Metodo Classico sparkling wine.
TASTING NOTES: The sparkling wine poured in the glass shows a golden blond color with greenish reflections and a very fine and persistent perlage. The aromas of great intensity and complexity are mainly reminiscent of white pulp fruits such as peach and pear, toasted nuts and fresh bread. On the palate it is possible to perceive the typical structure of Pinot Noir which well combines with the sweetness of the foam and the freshness of acidity; in addition to a long and persistent aftertaste with savory and spicy sensations.
