Our Alta Langa Metodo Classico Brut, whose vineyards are cultivated on the typical terraces of Langa with dry-stone walls, is born from the pleasure of high quality pérlage.
COMPOSITION OF THE CUVÉE: 100% Pinot noir
PRODUCTION METHOD: Pinot Noir grapes are carefully selected and harvested manually in baskets.
After a soft pressing, an alcoholic fermentation takes place at controlled temperature to preserve the bouquet.
After a period of about 8 months of resting on the fine lees, the second fermentation takes place.
After a rest of not less than 30 months, the degorging is carried out.
TASTING NOTES: Straw yellow with golden reflections, very fine and lasting perlage, fine aromas such as bread crust, yeast, dried fruit with light floral notes should be appreciated.
On the palate the fullness and flavor with notes derived from aging on the lees are much appreciated.
