The Blanc de Blancs Alta Langa expresses chardonnay with elegant finesse and persistence, the sweet and fresh floral notes of wild daisies accompany white-fleshed peach, grapefruit, and pineapple, flavouring with mineral hints softened by notes of honey.

COMPOSITION OF THE CUVÉE: From the Chardonnay grapes coming from vineyards in our management cultivated at an altitude of about 600 meters above sea level. The soil is calcareous-marly and the training system is Guyot
PRODUCTION TECHNIQUE: After the manual harvest, we carry out further sorting in the cellar, which goes to select only the best grapes, followed by a very soft pressing. The must is subjected to a static clarification, which then occurs alcoholic fermentation at a controlled temperature (13 – 14 ° C) in stainless steel tanks. The second fermentation takes place in the bottle with the Classic Method for about 80 days in the cool underground cellars of Colombo. An ideal period of refinement in the bottle follows. Traditional remuage on pupitres and dégorgement à la glace.
OENOLOGIST’S REMARKS:
Bouquet: fine and complex, it expresses itself with floral scents, fruit a white pulp and bread crust that give an enveloping nose and complex.
Taste: excellent balance between body and freshness, silky perlage and harmonious in the mouth, it shows an interesting flavour and minerality, soft dosage and excellent persistence.
Pairings: also excellent in combination with soups and goat cheeses also fatty. Perfect for a whole fish-based meal.
