Alta Langa D.O.C.G. Ispiro was born in the Underground Cathedrals in Canelli, a place rich in history, a magical location where the roots of Bosca reside, where bubbles have always been produced, where the most daring ideas have always come out.
The conception of Alta Langa D.O.C.G. “Ispiro” originates from the desire to tell the story of new ways of experiencing the bubbles of our sparkling wines, transforming the consolidated ritual of the celebratory toast into something new and unconventional: easy, accessible and inclusive; it was born to celebrate the 190 years of Bosca.
Courage and tradition, wisdom and audacity, heritage and obstinacy. And again: joy, share, spirit of adventure, infinite curiosity. All this and much more passed on the new look of the bottle: captivating, up to date, contemporary and full of surprises.
COMPOSITION OF THE CUVÉE: Chardonnay 100%
PRODUCTION TECHNIQUE:
The Chardonnay grapes are harvested in boxes between the end of August and the beginning of September and come from the vineyards located in the municipal area of Acqui Terme in the hamlet of Moirano. The first fermentation is carried out at a controlled temperature with selected yeasts. In the spring following the harvest the tirage is made for the second fermentation in the bottle. The bottles in refermentation are placed in stacks in the Underground Cathedrals of the Bosca family, Unesco World Heritage Site, located in Canelli. At the end of the second fermentation, the product remains in refinement for at least 36 months when, after a period of manual remuage, the dégorgement á la glace takes place with the addition of the liqueur d’expédition.
OENOLOGIST’S REMARKS :
COLOUR: intense yellow with golden hues and fine and persistent perlage;
HINTS: fragrant and complex with floral hints of elderflower or acacia, warm notes of chamomile, honey and bread crust;
TASTE: Dry, warm and harmonious, with a correct acidity that refreshes, long and persistent final.
