Alta Langa Zero Brut
Varieties: Pinot Nero, Chardonnay.
Production area: Piedmont – the grapes come from Alta Langa vineyards at elevations of more than 300 metres a.s.l., selected for their clay and limestone-rich soil. Their grapes give outstanding structure and acidity, ideal for long lees ageing.
Vinification: Grapes picked by hand in small cases are softpressed before the first-pressing must ferments in steel tanks at controlled temperatures. The prise de mousse is obtained by the Metodo Classico of refermentation in bottle.
Sboccatura tardiva: Contact with the fermentation lees lasts for about 60 months.
Sensory profile: The straw yellow is star bright and the perlage of tiny bubbles lingers unhurriedly. Complex, elegance fragrances of lime blossom, honey and ripe white-fleshed fruit shade into yeast-veined fresh-baked bread. Vigorous structure is sustained by good acidity as aromas of flowers, fruits and yeasts alternate through to a long, minerally finish.
Alcohol content: 12,5%.
Storage: Maintains its sensory profile for three or four years after disgorgement. Store bottles in a cool, dark environment.
Food matchings: A fine aperitif and equally excellent to drink through the meal.
Serving temperature: 6-8 °C.
