Tecnical data sheet: Vinification: destemming followed by a very short period of maceration on skins. Soft pressing is followed by static decanting. Then the must ferments in stainless steal at 16-17° C. The wine ages in the tank until the following spring, When it is bottled and prise de mousse. It spends 36 months maturing on yeasts.

Sensory characteristics: The fine and elegant pink colour is reminiscent of onion skins. The fine and persistent perlage and the aroma of crusty bread tie in well with sent of small red berries and wild flowers. The lingering and persistent flavour is very refreshing, thanks to the marked acidity caracteristiic of the fines Alta Langa.
