This unique Piedmontese maison, entirely dedicated to producing Traditional Method sparkling wines, is run by Marco and Alberto Cane under the invaluable supervision of their father Piero, a renowned sparkling wine expert with many years of experience.
The winery’s vineyards are located within the comunes of Santo Stefano Belbo ,Calosso and Cossano Belbo are mostly planted with Pinot Nero, with some Chardonnay.
The stylistic profile of the wines is designed to enhance and offer the best expression of the characteristics of the terroir, which is highly suited to this type of wine and has considerable personality.
This wine, made from Pinot Noir and Chardonnay grapes harvested from vineyards at medium /high altitude hillsides, is fermented in second year French oak barrels. The wine undergoes a “battonage” process ( stirring ) for the initial 4 months and it is then naturally cleared for another two months. Its cleanness is simply obtained through a natural static decanting, it is never filtered nor clarified. Ageing on the lees takes place in our cellars, in our family estate of 1850′s, where changes in temperature are slow and follow the natural course of the seasons.
