TotoCorde is the most classic cuvée, with Pinot Noir and Chardonnay. Bianc ‘d Bianc is Chardonnay, while Rosa is made only from Pinot Noir.
The Cocchi style for the Alta Langa does not contemplate fermentation or passages in the wood. The Pinot expresses its peculiar character with long aging on the yeasts in the bottle and modest residual sugar, and also Chardonnay only sees steel and glass and expresses the nature of the territory and the purity of the grape with a contemporary, rigorous and seductive sparkling wine. The Alta Langa is always produced with Metodo Classico technique, with traditional remuage on wooden pupitres and dégorgement à la glace.
